There’s nothing more iconic on the plates of Upper Austria than the dumpling. It comes with a filling of sweet plums or savoury meat, baked in the oven, fried, boiled or steamed - everything’s possible. Each region has its favourite way of eating dumplings. The most popular savoury side dishes are cabbage and potatoes. A mouth-watering delight for meat lovers: “Bratl in der Rein” - a pork roast with crispy crackling that’s served in a roasting tray alongside with dumplings, potatoes and cabbage. The mountainous Kalkalpen National Park region is famous for a special type of cheese produced in the Schlierbach Abbey and the delectable chocolate made by the confectioner “Bachhalm”. Nature lovers and hikers will love the scrumptious treats that are served in the mountain cabins: “Kasnocken” (a type of fresh pasta with grated cheese), “Topfenstrudel” (sweet strudel with quark), home-made cream cheese or - the all-time favourite - “Kaiserschmarren” (a fluffy pancake that’s split into pieces while frying).
Fancy a dessert? “Linzer Torte” is a classic of Upper Austrian baking tradition and known well beyond the borders of the city after it was named. It’s a form of shortcake with a layer of redcurrant jam, topped with sliced nuts and covered by a lattice of thin short dough stripes. Those with a sweet tooth will be over the moon about “Zaunerstollen”. This chocolatey pastry dates back to the Austro-Hungarian Empire. It was invented by a confectioner from Bad Ischl (Salzkammergut region) who was an official Purveyor to the Imperial and Royal Court. “Pofesen” is another sweet treat to die for. This simple dessert is made of sliced bread with a topping of jam, soaked in beaten eggs and milk, then pan fried. Most people know it as “French toast” athough it was not invented in France. Abundant gardens, fertile soils and farmers that are as busy as a bee - these are the prerequisites for a rich harvest. But which delicious food products will you get to taste? Well, that depends on the farm. For example, you’re welcome to help your hosts collect potatoes, harvest fruits and vegetables.
Every season is special. The culinary treats that are served vary throughout the year. But don’t worry: the local cuisine is always bursting with colour. Eggs from free-range hens, healthy milk from cows that graze on the meadows, fresh goat or sheep milk cheese or sweet honey produced by the busy bees. Stroll through the snack garden next to the farmhouse and pick sweet berries. Right in the centre of the farmer’s garden: the raised bed with an abundance of fragrant herbs. Help yourself! Mmh, the pleasant scent of thyme hangs in the air!

Many of our family farms also run a snack bar, cider tavern, wine tavern or even a restaurant. Here, you can indulge in culinary delights from the farm ... all day long. There’s no need to walk or drive to the next town. Would you like to take a break from cooking during your holiday? Choose a farm that offers half-board: start your day with a substantial breakfast and enjoy a delicious dinner. Your hosts will be happy to serve vegetarian or vegan meals. Please tell them your preferences before your arrival!

Choose from 21 organic farms in Upper Austria that serve 100% organic produce for breakfast, most of it being locally grown and home-grown. Have a look at the breakfast table and marvel at the variety of food products that grows on our soils. You’ll be amazed! Products that can’t be cultivated in Austria (e.g. coffee or cocoa) must be certified organic goods.
Sourdough bread with a crispy crust, delicious cheese, hearty salami, creamy yoghurt and butter, fresh apple and carrot juice and vegetables from the farmer’s garden. Innovative farmers also produce very special delicacies in Upper Austria: flax seed oil and fresh berries, hazelnuts and honey, mountain herbs and rolled oats, vegan spreads and tofu. How about a refreshment? Have a glass of cider! After all, this is the locals’ favourite drink. Upper Austria is know for its production of high-quality cider. The Mühlviertel and Innviertel-Hausruckwald regions are home to many cider experts (also called “pommeliers”) and local breweries of all sizes. They produce fine drinks of the highest quality. You should also try some home-made herb-infused syrup or fruit juice. “Schnaps” is a great after dinner favourite. A lot of farmers produce fruit spirits and brandy using only fresh fruit from their traditional orchards. Would you like to see how that works?
