Home-Made and Fresh Food
Culinary delights are a must for every good holiday. Who doesn’t like starting the day with an ample, delicious breakfast? It’s even better when everything on the breakfast table is carefully prepared on site with locally grown food and home-made products from the farm. Freshly baked bread, jam with berries from the garden, a glass of milk from the cows in the barn and a piece of different types of cheese from the farm's own production - that's what the breakfast table at the organic farms Obertrattenbachhof or Dorfergut looks like, for example. Freshly extracted honey tastes especially good. This is available for breakfast at all farms that have their own beehives, such as Mühlbauernhof or Biobauernhof Windbachgut.
If the children get up in the morning and fetch their own eggs from the henhouse, breakfast tastes even better.
Apart from breakfast, a lot of farms with holiday apartments provide breakfast boxes or order bread and rolls from the local bakery for you. Some farms even offer stays including half board.

Milk, eggs, meat, vegetables, fruit and herbs, these are some of the possible products that are directly processed at our farms with half board and served fresh to the guest at the table. Of course, the variety of our own products depends on the type of farming and not all of them can be produced ourselves. But you can rest assured that our farms are very conscious of regional foodstuffs.
One example of this is the Rauchkuchl in Stuhlfelden. Tobias Bacher's suppliers all come from the region and we cook with food that can be harvested at the moment. Either directly from the vegetable garden in front of the door or from the fields of the neighbouring farmers.
At the Löckerwirt, Örglwirt and Bachrain, a lot of emphasis is placed on home-grown food. You cannot book half board here, but you will definitely be catered for.

Where does the egg on the breakfast table come from? What does it take to produce a piece of cheese? Have you ever tried milking a cow?
Join the farmers in the barn and help them feed and milk the cows. Experience a day on the farm at first hand. Guests are often welcome to take part in farm activities such as preparing traditional meals, harvesting apples or potatoes or making yoghurt and cheese. Some farms organise bread baking workshops or guided herb walks and workshops. Of course, you can peek over the farmers’ shoulders when they’re milking the cows or join in the daily animal feeding. Especially your kids will love it!

In regions with many lakes, the most classic dishes are made with fresh fish. In the mountainous regions, you’ll find all kinds of variations with “Nocken” (a type of fresh pasta) or “Nidei” (a type of gnocchi). While the Pinzgau region is famous for its “Kasnocken” (a type of fresh pasta with grated cheese), people in the Pongau region love “Fleischkrapfen” (a savoury fried dough containing a filling made with small pieces of meat or sausage).
On the one hand, the traditional cuisine in Salzburg is substantial, hearty, but also sweet. On the other hand, it’s the heritage of old cooking traditions and food preparation techniques. All-Time Classics - Sweet Treats
Every province has a number of all-time classics and you can’t go home without having tried them. That’s also how it’s like in SalzburgerLand. Everyone knows “Salzburger Nockerl”, a mouth-watering dessert made with egg white foam that resembles three mountains. You’ll find it on the menu in a lot of restaurants in the city of Salzburg. The cuisine in the mountain cabins and alpine huts is known for its scrumptious sweet treats. Apart from the all-time favourites such as “Kaiserschmarrn” (a fluffy pancake that’s split into pieces while frying) and “Germknödel” (a fluffy yeast dough dumpling filled with plum jam), you should absolutely try “Bauernkrapfen” (a fried dough pastry eaten with jam). The latter is a sweet delight that you can often try in staffed mountain cabins (in summer) and on farmer’s markets. If you’re lucky, they are served on the farm you’re staying in or you can even have a look when the farmer prepares this delicacy. “Pofesen” is another sweet treat to die for. This simple dessert is made of sliced bread with a topping of plum jam, soaked in beaten eggs and milk, then pan fried. Most people know it as “French toast” even though it was not invented in France. Did you know that the French call it “pain perdu” (meaning “lost bread”)?

There’s one local delicacy from SalzburgerLand that needs lots of time to prepare. But it’s worth it! We’re talking about “Fleischkrapfen”. This traditional dish is usually served as a main course. It’s a savoury fried dough containing a filling made with small pieces of meat or sausage. It’s usually served with sauerkraut. Without a filling, the dough can also be fried and eaten with sauerkraut or jam. Simply add the topping and roll it up. That’s a different dish that goes by the name of “Bladln” or “Blattlkrapfen” in the Pongau region. While the locals in the Pongau region call “Fleischkrapfen” their signature dish, people in the Pinzgau region can’t do without “Kasnocken”, a type of fresh pasta with grated cheese. This popular dish is a must-try in any mountain cabin, whether it’s on an alpine pasture or in a ski resort.
