Our selection of the most traditional dishes from Upper Austria:
- Appetiser: A glass of cider
- “Leinölerdäpfel” (mashed potatoes with flax seed oil)
- Beef soup with slices of salty sponge cake (“Schöberl”)
- Main dish: A hearty plate of bacon dumplings
- Grande finale: A fried dough pastry called “Gebackene Mäuse” (which literally translates to “baked mice”)

Don’t Miss Out on These Culinary Treats from Upper Austria
- Dumplings - filled with sweet plums or apricots or a savoury meat stuffing. There’s nothing more iconic on the plates of Upper Austria. In the Mühlviertel region, it’s common to bake them in the oven whereas the locals in the Innviertel-Hausruckwald region prefer boiling them.
- A mouth-watering highlight for meat lovers: “Bratl in der Rein” - a pork roast with crispy crackling that’s served in a roasting tray alongside with dumplings, potatoes and cabbage. Home-cured “Geselchtes” (similar to corned beef) or “Tafelspitz” (boiled beef in broth) are Austrian classics.
- You should definitely not miss out on a freshly caught fish from one of the lakes in the Salzkammergut region.
- The Kalkalpen National Park region is the place to be for cheese lovers. The famous cheese from the Schlierbach Abbey is so soft, it seems to melt on your tongue...
- Hikers and outdoor lovers can indulge in a pan of “Kasnocken” (a type of fresh pasta with grated cheese), “Topfenstrudel” with vanilla sauce (sweet strudel with quark), home-made cream cheese or - the all-time favourite - “Kaiserschmarren” (a fluffy pancake that’s split into pieces while frying). The mountain cabins in Upper Austria have it all.
- Those with a sweet tooth will be over the moon about “Zaunerstollen”, a chocolatey pastry from Bad Ischl (Salzkammergut region), “Pofesen” (French toast with fruit jam) or “Krapfen” (fried dough pastry).
- What would you like to drink? Tasty fruit juices or herb syrups, a glass of cider, some fruit spirit or beer full of flavour - these are our favourites.

Spring
In February, sweet fried dough pastry tastes especially yummy in carnival when people dress up. The “Sunday of Love” (“Liebstattsonntag”) in Gmunden comes with the first signs of spring. Gingerbread hearts are a special treat! Come and peek over the farmer’s shoulder when she’s making Easter bread and pastries in elaborate forms.
Summer
Summer, sun and a glass of cool elderflower juice - these are the must-haves during summer. We can’t imagine doing without nice get-togethers around the campfire, baking home-made bread on a stick. Herbs are said to have an especially intense flavour and positive effect when they’re collected between 15 August (Assumption of Mary) and 8 September. A fragrant scent hangs in the air at this time.
Autumn
The leaves change colour and the temperatures are steadily dropping - autumn comes with an array of culinary delights. In September and October, pressing cider and drying fruit are must-dos on almost every farm. Look forward to treats in the glass. Farmers pickle, can and ferment fruits and vegetables - for a colourful and diversified diet during the cold season.

Winter
The smell of gingerbread, biscuits and fruit bread is so tempting. In Austria, nobody can resist “Vanillekipferl” - sugar-coated vanilla biscuits. A revelation! In the farmer’s kitchen, hearty dishes become popular during the cold winter months. “Innviertler Surspeck” (salt-cured slabs of fatback), “Geselchtes” (cured meat similar to corned beef) and “Holzknechtnocken” (a hearty dish with dumplings) are only some of the traditional meals.
